Spinach & Arugula Salad Wrap with Feta

Ingredients:

  • ¼ cup of olive oil
  • 2 tablespoons lemon juice
  • ½ teaspoon of salt
  • ¼ teaspoon of black pepper
  • 1 large tomato, diced
  • 1 cup of feta cheese
  • 1 large cucumber, diced
  • 1 medium red onion, diced
  • 2 cups of arugula salad
  • 2 cups of spinach salad
  • 6 slices of pita bread

Directions:

  1. Whisk oil, lemon, salt, and pepper in a bowl.
  2. Add tomato, feta cheese, cucumber, spinach, arugula, and onion. Toss to coat the vegetables.
  3. Cut each pita slice to create a pocket and fill with the salad mixture.
